1 medium onion, chopped
1 cup carrots, sliced
1 cup celery, diced
1 tablespoon vegetable oil
1 package (9 oz.) frozen chopped spinach
3 cups cooked turkey
1/2 cups country or baked ham
1 can (10 3/4 oz.) canned cream of chicken soup
2 1/2 cup milk, divided
1/4 teaspoon black pepper

Pocketbook Cucumbers

  • 2 pieces of pita bread
  • 3 TBSP creamy ranch dressing
  • 1 small cucumber, sliced thin
  • 1 carrot, sliced thin

 

Slice each piece of pita bread in half.  Open the pockets and spread each half with the ranch dressing.  Slide to slices of cucumber into each pocket.  Add the carrot slices on top of the cucumbers.

 

If you are having some trouble opening the pita bread pocket there is an easy solution.  Place the halves on a piece of paper towel.  Place them in the microwave on high power for about 8 seconds.  Gently press to open the pocket.
