Turkey and Dressing Soup

  • 2 to 3 cups bits of turkey (turkey bones may be boiled, then bits of turkey removed, water may be used in soup)
  • 3 to 4 cups cornbread dressing
  • 10 to 12 cups water
  • 6 chicken bouillon cubes
  • 1 to 2 chopped onions
  • 4 potatoes, cubed
  • 2 cups thin sliced carrots (optional)
  • 1 large turnip, cubed
  • 6 to 8 stalks celery, sliced (optional)
  • 1/4 head cabbage, sliced
  • 1/4 tsp pepper salt to taste
  • 1 bay leaf (remove before serving)
  • 1 Tbs chopped parsley

Bring water to boil. Add bouillon cubes and let dissolve. Add vegetables and cook until just barely tender. Add cornbread dressing and turkey to soup mixture.

Great way to use your Thanksgiving leftovers. May be frozen.

Italian Turkey Pasta

  • 1 box Barilla Farfalle pasta (1 lb)
  • 2 lbs ground turkey
  • 2 Tbsp Italian Seasoning
  • 1/2 cup chopped yellow onion
  • 2 garlic cloves
  • 4 Tbsp flour
  • 1-1/2 cups milk
  • 3/4 cup water
  • 14-12 oz can diced tomatoes
  • salt and pepper to taste

Cook pasta in boiling water with added salt. While pasta is cooking, brown turkey, onion, garlic and Italian Seasoning in skillet. Drain fat if needed. Stir in flour. Gradually add milk and water. Reduce heat and cook until thickened. By now your pasta should just about be done. Drain the pasta and add the can of diced tomatoes and the pasta to the turkey mixture. Toss well.
